Named Colette, the restaurant refers to Sidonie-Gabrielle Colette, the French novelist.
Surrounded by olive trees and palm trees, overlooking the hotel's iconic pool, it offers an exceptional setting in a festive and intimate atmosphere. Only prepared with fresh ingredients, the dishes are inspired by exotic or Mediterranean flavors in homage to the region. A true invitation to travel, the menu follows trends and offers bold, modern culinary creations that breathe the azure sun.
For dinner, our starred chef and Master Restaurateur Philippe Colinet offers you a journey through the Mediterranean, authentic, pure and vibrant. The menu is composed around local and seasonal products, alongside loyal producers from the Gulf of Saint-Tropez.
The product at the heart: its taste, its composition, and its entirety are sublimated and preserved.
Chef Philippe COLINET - Master Restaurateur
Since 2020, the Sezz hotel and its Colette restaurant have become inseparable from the name Philippe Colinet.
“My first memories? I must have been three years old…”, assures the one who, at the reopening in the summer of 2020, brought this extraordinary address its first Michelin star. From childhood, he retains memories of summers on the road to the south, of fruit and vegetable sellers, of the unique taste of peaches, apricots, and seasonal tomatoes. Simple, true flavors that this chef, who has worked among other places in the Loiret - where Colette also had a house - now crafts here in a cuisine marked by localism and naturalness.
In his kitchen, the spirit resonates at the same tempo as that of the irresistibly free writer, the second woman to become a member of the Académie Goncourt. Here, simplicity is transcended by expert work, faithful above all to the product and the sincere relationship Philippe Colinet maintains with his suppliers.
The product in majesty
Philippe Colinet's personal approach starts above all with learning about the product, how it grows or how it is cultivated, through fruitful exchanges with local market gardeners, fishermen, and breeders. This exclusive link between the product, the producer, and the chef then allows it to be enhanced in the kitchen, whether it is a simple tomato or a Mediterranean oyster harvested in Tamaris, squid, red mullet, poivrade artichokes...
Philippe Colinet knows that, like a jewel, an ingredient is nothing without everything that surrounds it. He has a particular fondness for the wild picking of edible herbs and flowers: sea fennel found along the beach next to Sezz, as well as blackberries, wild fennel, and salad burnet all have a place of honor in his repertoire. Today, the Sezz hotel has its own aromatic garden.

Comfortably seated around a table signed by Christophe Pillet, follow the Chef's movements in the kitchen and then engage with him about his creations and products.

Practical Information
The Colette Restaurant has a capacity of 45 seats on the terrace or 30 seats indoors.
The restaurant is closed every Monday and Tuesday evening in May, September, and October.
Open 6/7 in June, July, and August (closed on Monday evening).
Non-resident guests are welcome for dinner.
